Tanzania in general has excellent mobile phone coverage, well extended onto Zanzibar as well. Please check with your home based network provider for international roaming and data coverage.
If you plant to stay longer in Zanzibar, ask your tour operator to help you getting a local sim card. You can actually get 3GB for 0.5$ for one month or weeks, and some minutes to call!
